Catering Level 1 School Link Course
Qualification: NVQ level 1 Certificate in Professional cookery
Length: 1 academic year
Day and times: Fridays from 9am-2.30pm (to include 1 hour lunch)

Cost to school: £1,700 per student (to include PPE and lesson materials)
This course is suited to students in year 11 as a practical subject to go alongside their GCSEs, they should also have a specific interest in catering and may wish to pursue a career within the industry. The course involves practical work and assessments in our professional kitchens and includes units such as teamwork, food safety and preparation/cooking of vegetable and meat dishes.
Students will learn about food hygiene and safe production of food before any production lessons take place, a requirement for anyone working with food. Optional units on the course include food presentation, baking and patisserie, safe usage of commercial kitchen equipment, health and safety practices and regulations, safe storage of food as well as the personal and social skills needed to succeed in the industry.
Students work in commercial standard kitchens producing food that is sold to staff, students and important visitors to the college. All students are required to wear chef whites and non-slip footwear, which is provided in the cost of the course. These are professional kitchens and students will be expected to present themselves as catering professionals.
The qualification and units are graded at a Pass. At the end of each lesson, students will be assessed on their end product, hygiene, teamwork and professional skills. In addition to practical assessment, students will collect evidence using an electronic portfolio covering a range of mandatory and optional units and will also be tested by multiple choice question papers for each unit.
This qualification will help towards getting a job in the catering industry. Students can also progress to a Level 2 course at RuTC, which will provide the minimum standard qualification required by the industry to work in a professional kitchen.
An application form must be completed by the school or local authority. Schools must also send us information of any Educational Health Care Plan (EHCP).
